High levels of minerals and heavy metals such as potassium, sodium, iron, zinc, manganese, mercury, cadmium, or lead in the human body can be harmful or fatal. Metals and metal species can enter the human food chain through direct contamination of a product or through the environment in which a plant is grown or animals for consumption are raised. For example, high levels of mercury and in particular methylmercury can be found in fish which live in polluted waters. It is necessary to test certain foods to ensure that they are safe to eat and within the recommended safety limits.
