  Rapid In-Process Analysis of Fat and Dry Matter in Cheese (AN50941)
 Abstract: This study shows FT-NIR spectroscopy to be an ideal tool for the in-process quantitative analysis of processed cheese.
 Two components were analyzed, fat and dry matter.  Fast, easy, and accurate, FT-NIR is shown to be an excellent alternative to traditional methods for determination of fat and dry matter in processed cheeses during their manufacture.
