 Acidity of dry whey is determined using the first derivative titration technique. NaOH titrant is added to a volume of deionized water containing an accurately weighed dry whey sample and an Orion RossTM combination pH electrode. The Orion 960 Autochemistry System determines the endpoint and calculates the acidity of each sample.
